Happy Friday! As the week comes to an end, brunch is almost upon us! For me, brunch is usually something that happens at home-I rarely venture out to a restaurant. With that, and this super cold weather we are experiencing along the east coast, I thought I'd share a my favorite, yet easy and tasty, brunch recipe if you want to stay in. I can't take credit for this recipe as I found it via google a while ago, but there are a few adjustments I like to make:
1. I swap the pork for Applegate turkey sausage
2. I swap the pepper jack cheese for smoked gouda or asiago
3. I will cut only a few leaves of spinach into ribbon leaves to sprinkle on top after it's done
